Comparison of the contents of ochratoxin A (OTA) and zearalenone (ZEA) in cereal products from organic and conventional cultivation
Summary.

Toxins produced by fungi of the genera: Fusarium, Aspergillus and Penicillium are considered particularly dangerous in organic and conventional cultivations. These fungi produce toxic substances under environmental stress, when there are changes in temperature, humidity and oxygen availability. The aim of this study was to compare the contents of zearalenone (ZEA) and ochratoxin A (OTA) in cereal products from organic and conventional cultivations, available on the market in the lubuskie province. Products from organic cultivations showed higher contamination by ochratoxin A (OTA) in comparison with products from conventional cultivations while smaller in the case of contamination by zearalenone (ZEA). Ochratoxin A (OTA) occurred in 63.13% of the samples from organic cultivation and 47.37% from conventional cultivation. Increased levels, exceeding acceptable limit (MRL) of ochratoxins A (OTA) were detected ina barley from conventional cultivation – 4.3 μg/kg and semolina sample from organic cultivation – 32 μg/kg. Studies have shown the presence of zearalenone (ZEA) in 5.29% of the cereal products samples from organic cultivation and 15.79% of the samples from conventional cultivation.
