Part I. Size of yield
In the experiment the influence of mushroom harvesting method on yielding in phase four substrate, depending on the stage of development of the fruiting body and market requirements, was determined. The results proved that the accelerated harvest, applied in order to obtain higher yield, was characterised by a significant predominance in total harvest, as well as commercial one compared to traditional harvest. Total yield obtained from 1 t of substrate in traditional harvesting was lower and amounted to 359.3 kg of mushrooms while for the fresh market it was the highest, i.e. 439.3 kg in accelerated harvesting. The highest yields correspond to the highest rate of biological efficiency (%BE). The share of the commercial yield for the fresh market in the total yield was higher in accelerated harvesting in comparison to the traditional harvesting. The weight of stems was significantly lower in the accelerated harvesting yield, comparing to the weight of stems from the traditional harvesting. The accelerated harvesting allowed for obtaining higher economical results in comparison to the economical results from the traditional harvesting.
