The present-day food industry production practice, regardless of the processing industry, is oriented towards seeking solutions to make it possible to reduce costs while at the same time maintaining the technological regime. A traditional approach on the part of producers based on unchangeable technological standards is giving way to those actions which aim at a certain optimization of the technological process. One of the chief criteria here is a limitation of the costs of the execution of operations. On the other hand, there is a growing demand in relation to increasing qualitative requirements including health requirements while maintaining the traditional nature of the product. This paper presents an overall description of one of many numerical modelling methods (in this case, the Computational Fluid Dynamics – CFD) as a tool to support an optimization of the existing technological process both in relation to the changes of the parameters of individual operations and the guidelines for constructional changes of machines and devices used in these operations. This method of the use of CFD was presented on the example of basic smoking in a single truck smoking chamber. In this case, the modelled problem was a flow of air and smoke mixture in an electric single truck smoking chamber, KWP-1etz model manufactured by PEK-MONT. In the model, three geometric representations of the charge were declared. ANSYS software in the form of an ANSYS Mechanical module was used for the construction of the model; CFD tools known as CFX version 12.1 were used for the preparation of the simulation, calculations and processing of the results. As a result of the calculations made, spatial distributions of the mixture velocity and movement tracks of smoke particles were obtained. On this ground, an analysis was conducted of the uniformity of the mixture flow inside the chamber taking into consideration those spaces where “dead areas” occur.
