Effects of lighting conditions on accuracy of fat content determination in model mixtures of pork meat and fat by video image analysis
Summary.

The aim of this work was to determine the optimal measuring conditions for estimation of the fat content in model mixtures of pork meat and fat by video image analysis (VIA). The material in the experiment was pork meat (first class) trimmed from pork ham and back fat. It was ground in a grinder through a 20 mm steel plate. Six model mixtures were prepared with the back fat share 0-100%. Under standard conditions photographs of the mixtures were taken. Three types of lighting were used: incandescent, fluorescent and halogen. The basic chemical composition (water, fat and protein contents) of the mixtures was determined using standard methods. R, G, B values were obtained using VIA. The type of lighting significantly influenced the share of white and red spots in the photographs, as well as R, G, B values. Irrespective of the fat content in the mixtures, the highest correlation coefficient between fat content determined by the Soxhlet method and white spots share obtained using VIA was observed when halogen light was applied. The observed relationships suggest a possibility of applying VIA for estimation of fat content in the model mixtures of pork meat and fat.
