The aim of the study was to evaluate changes in structural elements within two adjacent parts of the longissimus dorsi muscle (musculus longissimus dorsi) in pigs, occurring under the influence of curing brine injection and masaging. Two parts of muscles were collected for analyses: the thoracis section (musculus longissimus thoracis) and the lumbar section (musculus longissimus lumborum). The structure of muscles was analysed in terms of the following parameters of muscle fibers: area, diameter, the Feret diameter H and V, percentage of muscle fibers and their amount in the analyzed field of view. The shape of fibers was determined on the basis of the H/V diameter ratio. Results were analysed statistically using the Statistica software package. On the basis of results recorded using computer image analysis the effect of both processes on histological changes in each of the analysed sections of the longissimus dorsi muscle was found to vary.
