Products intended for consumption by babies and young children must be characterised by right nutritive value, microbiological and chemical purity. It is very important to control the contamination content in products intended for that age group because an intake of even a small amount of toxic substances may cause irreversible changes in a human body. This paper presents research results on the contents of lead, cadmium, arsenic and mercury in instant gruels intended for infants and small children. Four gruels have been researched: rice grit, rice grit with raspberry, manna on modified milk and rice grit with milk and cocoa. Analyses were performed using atomic absorption spectrometry (AAS). It has been shown that all the appraised products were free from lead and mercury contamination. The accumulated amounts of the other heavy metals (cadmium, arsenic) were of admissible amounts.
