The effective use of dairy rinsings in order to regain proteins
Summary.
The purpose of the present work was to explore the possibilities of secondary use of dairy rinsings from machines. The results of the research indicate the great further processing possibilities of protein-and-fat-rich rinsings. The suggested cheese mass production process can easily be adopted in any dairy. That would enable the dairy to recycle the process wastewater, which would result in lowering its quantity by 9% and polluting potential (nitrogen by 25%, COD by 13% and BOD5 by 11%). The investment a dairy would make in wastewater recycling would pay for itself in two-year time.
