The aim of the study was to assess sorption properties based on the course and kinetics of a sorption isotherm of mare milk lyophilizate packaged in nitrogen atmosphere in a packet made from chalk overlay paper coated with polyethylene type NCPE-7518. Lyophilizates were stored for 6 months at 24±1°C and 35-40%RH. Storage of lyophilizate resulted in an increase in water content by over 7% and at the same time in an increase in water activity by over 12%. Fitting of the course consistent with the pattern of isotherms type II according to the BET classification was performed on the basis of a curve following the procedure of smoothing least squares weighed by distance. As a result of 16 h sorption lyophilizate not subjected to storage increased its weight to 0.28 g H2O gs/s. In the stored lyophilizate an increment in water content was by 29% smaller. A marked increase in the increment rate of water content was found during the first 2 h of sorption. The lyophilizate not subjected to storage at that time reached 82% total increment in water content, while for stored lyophilizate it was 65%.
