Determination of influence of contamination of wheat grain with microscopic fungi and their metabolites on the quality of products of grain processing
Summary.

Model studies of the influence of changes in the concentration of ERG and trichothecenes in the technological process of the production of bread obtained from flour after grinding grain of two wheat varieties (Torka and Griwa) were made. Grain came from two field experiments: control and inoculated with Fusarium culmorum. They were subjected to laboratory milling, and the obtained flour was used for laboratory baking of bread. Based on the obtained results, it was found that the concentration of the fungal metabolites studied as a result of grinding decreased by about 90% in flour, in comparison with the grain. There was a significant accumulation of micro-scopic fungi and their metabolites in the bran. The increased content of mycotoxins significantly worsened the baking properties of flour, and the bread baked out of it was qualified for the second or third class of bread. A significant effect of storage conditions on the development of fungal microflora and the formation of mycotoxins was found.

The increase in ERG, trichothecenes and CFU number at 84 hours after baking in the case of bread baked from the inoculated Torka wheat flour and at 96 hours in the case of flour in inocu-lated Griwa wheat was convergent with the observed appearance of the first mold colonies.

The dynamic growth of mold during bread storage is expressed in the number of CFU. The ERG concentration, however, changed exponentially.
