The content of lead and cadmium in selected vegetables in the Lublin region
Summary.

Background. Vegetables are a necessary component of the human diet. The nutritional value
of vegetables depends on the content of micronutrients and the lowest possible content of potentially toxic elements. The aim of the study was to measure the content of lead and cadmium
in vegetables collected in the Lublin region and to compare them with the threshold values
and limits of metal intake for humans.

Material and methods. The following vegetables were included in the study: peas, lentils, potatoes, forest mushrooms, peppers, broccolis, tomatoes, cucumbers, pickled cucumbers, beetroots and carrots. Databases of the Central Statistical Office provided information on the average consumption of these vegetables in Poland. The metal contents in the vegetable samples were measured using ICP-MS (Agilent 7500ce).

Results. The highest content of lead was found in red peppers (11.51 µg/kg), whereas the highest cadmium content was found in mushroom samples (418.94 µg/kg). The lead and cadmium intake in each vegetable group was confronted with the current limits of metal intake which are safe for humans (BDML, PTMI). The threshold contents were not exceeded in any of the vegetable samples.

Conclusions. None of tested vegetables exceeded the current metal intake indexes, such
as BDML and PTMI.
