Relationship between β-lactoglobulin variants and fatty acids composition in sheep milk, as well as its chemical components
Summary.

The aim of this study was to evaluate the relationship between β-lactoglobulin polymorphism and fatty acids composition, as well as basic milk components (fat, protein, casein, lactose, total solids) of ewe’s milk. The study was carried out on 60 nursing lambs ewes. Milk samples were collected during the 4th week of lactation. Three β-LG genotypes (AA, AB, BB) were identified in the studied ewes. Among the analysed components of milk, the effect of genetic variants of β-lactoglobulin was marked only in the lactose content. Milk with genotypes BB was characterized by a higher (P ≤ 0.01) content of MUFA compared to AB and AA genotypes. The highest (P ≤ 0.01) content of polyunsaturated fatty acids n-3, including C18:3 n-3 in the milk, was associated with the AB genotype, although this genotype differed statistically only with the AA. The highest content of LCFA (P ≤ 0.05) was found in the milk of ewes with the BB genotype. The results, although ambiguously, showed a relationship between β-lactoglobulin variant and some fatty acids content. In order to establish the role of β-LG in lipid metabolism in mammary gland further studies are required.
