The study was performed on 20 blackhead sheep lambs, after weaning held under grazing on mountain pasture, feeding at will, slaughtered at a body weight of 35.0 kg. On the basis of the research there were found the optimum values of pH1 and pH24, as well as the physical and chemical characteristics of dorsi muscle (M. longissimus dorsi) in lambs obtained under whole-vegetation maintaining at the pasture. Furthermore, the advantageous, from the point of view of human nutritional requirements, profile of fatty acids, particularly the high level of C18:0 acid, CLA, low ratio of n6/n3 and relatively favourable atherogenic index (AI) were observed. Also, significantly higher level of acid C18:0 was found in rams and in twins, compared to ewes and singles and significantly higher level of long-chain fatty acids (LCFA) and lower atherogenic index (AI) at group of ewes compared to rams were stated. The results give rise to a recommendation for blackhead sheep maintained on a mountain areas in the extensive grazing ewes in the flock renovation, characterised by a predisposition to give birth to twins and the use of rams for meat production. This should lead to the acquisition of meat with favourable chemical composition, physical characteristics and values of the fatty acid profile, demanded from the viewpoint for healthy human food.
