The objective of the study was to assess the influence of selected factors on the chemical composition and the freezing point of milk collected by one of the dairies in central-eastern Poland. The effect of the following factors: the size of the monthly supply of milk, season of production and maintenance system of cows was analysed. It was found that the average monthly delivery of 20 analysed farms amounted to 2,180 l. The content of fat and protein in milk averaged 4.17% and 3.37%. There was significantly more favourable composition of milk (higher dry matter content, fat and protein) supplied in the autumn-winter period. Studies also showed that the milk of animals kept in the stall barn system was characterized by a higher fat content and lower protein content, compared to milk from cows maintained in a free-stall system (respectively 4.21% and 3.30%). In the evaluated milk samples no water addition to milk was established, on the basis of the freezing point.
